Fried Crispy Chicken Recipe


Preparation time: 20 minutes+ marinating
Total cooking time: 30 minutes
Recipe serves 4

Ingredients

4 chicken marylands or 8 drumsticks
4 cloves garlic, chopped
3 coriander roots, finely chopped
2 teaspoons ground turmeric
1 teaspoon freshly ground pepper
1 teaspoon salt
1 teaspoon caster sugar
2 tablespoons chilli sauce

Method

1. Boil the chicken in a pan of water for 15 minutes or until it is cooked through; allow to cool completely.

2. Combine the garlic, coriander root, turmeric, pepper, salt, sugar and chilli sauce in a mortar and pestle or small bowled food processor. Grind or process until the mixture is smooth.


3. Brush paste over chicken; cover, refrigerate 30 minutes. Heat some oil in a heavy-based pan; add chicken, cook until dark brown, turning frequently. Drain on paper towels. Serve hot or cold with chilli sauce, if desired.

Hint
Chicken marylands will take longer to cook than drumsticks.
