Ingredients
400g prok loin or fillet
¼ medium pineapple
1 tablespoon oil
4cloves garlic, chopped
4 spring onions, chopped
1 tablespoon fish sauce
1 tablespoon lime juice
½ cup fresh coriander leaves
¼ cup chopped fresh mint
Method
1. Cut the pork into thin slices, using a very sharp knife.
2. Trim the skin from the pineapple an cut the flesh into small bite-sized pieces. Heat the oil in a wok or heavy-based frying pan, add the garlic and spring onions and cook for 1 minute. Remove from the wok.
3. Heat the wok to very hot; add the pork in 2 or 3 batches and stir-fry each batch for 3 minutes or until the meat is just cooked. Return the meat, garlic and onions to the wok and then add the pineapple pieces, fish sauce and lime juice. Toss well. Just before serving, sprinkle with the coriander leaves and chopped mint; toss lightly. Serve with rice.
Hints
To make the meat easier to slice, freeze it until it is just firm and slice thinly while still frozen.
Cook the pork over high heat, stirring constantly, until it is just tender. Do not overcook or it will become tough.
