Pineapple Tarts Recipe


This is a favorite Chinese recipe dish that has gained huge popularity within the Asian community. Pineapple tarts are normally sold a small plastic container mostly found at supermarkets and stalls. This recipe is very well accepted especially in the Chinese community household.

Ingredients

2 Pineapples
275g Sugar

Pastry

300g Plain flour
1 tsp Baking powder
250g Butter
3 Egg yolks
4 tbsp Ice water
½ tsp Vanilla Essence
¼ tsp Salt
1 Stalk Lemon Grass
½ Inch Ginger
3 tbsp Cooking oil
1 tbsp Ground Coriander
1 tsp Ground Pepper
½ tsp Ground Turmeric
½ tsp Ground Cumin
1 ½ tsp Salt

Glaze

1 Egg Yolk (Mixed with 2 drops of yellow coloring and 1 tsp water)

Method

1. To make filling, shred the pineapples finely and sift drip the juice until dry. Cook the pineapple shreds over high heat till dry then add in the sugar. Switch to medium heat and simmer till golden brown.
2. To make pastry, sift plain flour and baking powder together. Rub in butter until it becomes breadcrumbs-like.
3. Make a well at the center, add in the egg yolks, ice water, vanilla essence and salt and knead into smooth dough. Set aside for 30 minutes.
4. Preheat oven to 150° C degrees.
5. Roll out pastry to 1/4 inch thick and cut with a fluted cutter. Place on a baking tray. Place the pineapple filling at the center of pastry and glaze with egg mixture.
6. Bake for 15-20 minutes.
