Chee Cheong Fun Recipe


Chee Cheong Fun can be translated into Steamed Rice Noodle Roll. This Chinese recipe originates from the Southern China and Hong Kong. It is often being served in Chinese restaurants as type of Dim Sum (small portions of Chinese dishes served mostly in steamed baskets). The ingredients used in Chee Cheong Fun varies from Char Siu, prawns, mushrooms to vegetables. Often served together with Sweet soy sauce, XO sauce or Sweet sauce.

Ingredients

100g Corn flour
300g Rice flour
950ml Water
8 Shitake Mushrooms
½ Carrot
1 tbsp Vegetarian oyster sauce
A Dash of Pepper
Sweet soy sauce to taste
1 tbsp Sesame seeds
Cooking Oil

Method

1. Sift the corn flour and rice flour together. Mix well with water and set aside.
2. Chop the mushrooms and cut the carrots into tiny shreds. Heat two tablespoons of cooking oil in a pan and stir fry both the mushrooms and carrots. Season with oyster sauce and pepper. Set them aside when cooked.
3. Lightly oil the base of a 20 cm round or square baking tray. Pour about 50ml of the flour mixture into the tray.
4. Place the tray in a wok and steam for about 3 to 5 minutes over medium heat.
5. When the Chee cheong fun has set, put a spoonful of the vegetable filling in the middle and roll it up.
6. Sprinkle sesame seeds on top and serve together with sweet soy sauce.

Cooking Tips

You may replace the vegetable and carrots with any fillings of your preference such as prawns or Char Siu (Barbecued Chicken or Pork).
