Nyonya Kampung Fried Rice Recipe


A wide variety of different types of friend rice recipe can be found. Baba-Nyonya is a term used to describe the Chinese descendants that has migrated into Malacca, Malaysia during the 15th and 16th century. The obvious distinction from this minority Chinese ethnic group will be their assimilation of the Malay culture into their own. A well overall accepted traditional Malay cuisine and a distinctive fried rice recipe.

Ingredients

2 Eggs
3 Stalks of Spring onion
80g Dried Shrimps
12 Dried Chillies
10 Shallot Cloves
4 Garlic Cloves
4 tbsp Cooking Oil
3 Bowls of Cooked Rice

Method

1. Beat the eggs and fry into an omelette before cutting into thin shreds.
2. Chop the spring onion.
3. Pound the dried shrimps, dried chillies, shallots and garlic together.
4. Heat up oil and fry the pounded ingredients until fragrant.
5. Add in the cooked rice and fry till fragrant.
6. Add in the omelette shreds.
7. Serve with chopped spring onion sprinkled on top.
